Yummy Tummy Tuesdays – Multigrain Berry Fruity Coffeecake

Happy Birthday to my sunray! I wake her up with 'Good Morning, Sunray' everyday. ('Good Morning, Sunshine' already taken by her older brother whom I continue to greet that way still). 
I am not much of a baker (or should I say, not at all) but at times I do use baking mixes to feel like one. In my quest for healthy options, I found Trader Joes Multigrain Pancake and Baking Mix about two years ago. Now, pancakes are a favorite lunch item for the kids. Sometimes, I use it to make coffeecake. I mostly use the recipe on the box with a little twist of my own. Surprisingly, it is a hit at home, which means it has become a regular feature at home.

What you need: (my twist)
1 egg
1 cup buttermilk (sometimes I have added ½ cup milk and ½ cup of available juice at home to change the taste a little)
3 tbsps oil
2 ½ cups Trader Joes Multigrain Pancake and Baking Mix
½ cup fresh or frozen pineapple bits (I used Trader Joes Frozen Pineapple Bits and they are sweet)
½ cup fresh or frozen blueberries
½ cup fresh or frozen strawberries
½ cup sugar

How to make: (as the box says)
Preheat oven to 350. Whisk together egg, buttermilk and oil. Stir in baking mix and sugar until just moistened. Stir in the fruits/berries. Spread into a greased 8x8x2-inch pan. Bake 45-50 minutes. Allow to cool. Top off with some chocolate syrup if you wish. Enjoy.

Note: You can of course add your own mix of fruits and berries - I have used cranberries, chopped bananas, chocolate bits as well.
